I have added https://github.com/jekyll/jekyll-sitemap as a plugin in the section 'plugins'. I have also added configuration to _config.yml, which makes the plugin skip these folders:
"assets/images/**"
"assets/meetings/**"
"downloads/**"
After running the script _serve.ps1, the sitemap is automatically created as sitemap.xml in the site's root.
