Edits for the JOSS review

Here are some edits to the JOSS paper for https://github.com/openjournals/joss-reviews/issues/3676

If you're happy with these, merge it and then I see a few remaining issues:

1. There's one TODO left in the manuscript that should be tackled.
2. I assume that you're planning on merging this joss_review branch into master?

Hi @dfm, hope you had a nice break! I'm back in the office now so have actioned your requests about https://github.com/openjournals/joss-reviews/issues/3676. I have:

• Merged your changes to the paper (thanks for those)
• Merged the joss_review branch into master
• Released this commit as v1.1.0, which I have linked into the paper.md and pushed, getting rid of the TODO
• Ran the v1.1.0 code to make the accuracy estimation plot in the paper so we know the paper matches that release version
