It has nothing to do with GameTDB, it has to do with Galaxy's API. I can't really do anything about that unfortunately until GOG enables the ability for plugins to add metadata on its own, right now all Galaxy can do is get the name of the game, game time, and achievements. Then, Galaxy searches the name of the game in their database which consists of data from IGDB and that's where the data comes from. I'll reopen this once this feature gets integrated.

I can't manually change the games information by hand even if I wanted to, Galaxy just doesn't support it right now, but if I had to rename all my isos anyways, couldn't I just name them the exact code they are?
