Incorrect defaults

The product has 2 fields - address and name. The customer had asked for the
address to be blank in the original order.
However, when reordering the address is filled with the default address
instead, making it incorrect.

The same thing happens in a 2-step theme

A customer personalizes a product and leaves one or more fields empty 
and then adds it to the cart.
Then the customer wants to change this product so goes back to edit.
In the one-step theme the preview updates with the customized text as 
soon as the customer returns to the product and the fields that were 
left blank remain blank.
In the two-step theme the preview also updates with the customized 
text as soon as the customer returns to the product but the fields 
that were left blank are filled in with the template text.
