When Chef runs the nginx cookbook it creates configurations based on the 'server' variable in the chef/environments/*.rb files.
If that server name changes, the file related to the previous domain is not deleted and causes nginx to fail on startup.
Suggested solution is to have chef clear out those files before creating the necessary ones.
