Add .NET 7 and drop .NET 5 #238

.NET 7 targeted to be Released November 2022 replaces .NET 5 as current release.

Just want to clarify that, despite the fact that this library is no longer explicitly targeting .NET 5, you can still use this library if your app targets .NET 5 because we are still targeting .NETStandard 2.1
