Or at least be able to commit all changes of one row at once by a button.

I will consider this as a change in the future. Probably will be added some 
edit form where you can edit current row and post it back to server.
I'm still experimenting with this an unoffical demo is on the 
http://jquery-datatables-editable.googlecode.com/svn/trunk/ajax-popupedit.html.
