docs: trimmed up README and move content to wiki

Description

Include a summary of the change and which issue is fixed. Also, include relevant motivation and context. List any dependencies that are required for this change.

Removed some of the content in the primary README and move to the project wiki. This was motivated by the fact that the primary README exceeded DockerHub's size limit. This also reduced how daunting the main README made the container image look.
