So while trying to send my malware over to Windows 2016 I found out Windows Defender hates me.

you could always just setup exclusions instead of turning it off

I fully agree! At the time this was made we were very upset so killing it felt good and made us happy. We also didn't know how it worked so exclusions were not something we thought of.
