Update | Updating Manual Links and GIFs

Summary

This PR updates the manual links in README.md and also fixes the GIFs in the manual.

Motivation/Context

The links in README.md could only be updated after the manual.yml Workflow ran. This Workflow only runs on the master branch, so these changes could only be ran after merging #58. Additionally, GIFs were not properly rendering in the manual.
