Update ci.yml to test latest stable release #80

Also enable mac aarch64 CI. Run lesser CI.

I think I'll add back the nightly test later, and maybe the LTS (although presumably that's been tested many times already)

Note that both nightly and LTS are included, but they probably don't need to be tested on all OSes. Of course, feel free to add more combinations if that is helpful.
