some docker setup improvements #44

This includes the following:

images on Dockerhub
easy to switch between stable and dev images
true AIO docker compose setup that includes the runner (depends at least on #38)

Docker images are now being prebuilt but are not on Dockerhub but here on github (ghcr.io/julianfp). The latest tag (default) points to the latest stable release while the main tag is a development version that points to the latest commit on the main branch. Moved discussion on full AIO docker compose setup to #38 so that I can close this
