Document current REST API endpoints of spaces in OpenAPI

Story

As a DEVELOPER I would like to read about how the API to manage spaces works, so I can consume this API in my application.

Description

Many endpoints tracked in #37 have been implemented, but they're currently not documented in the OpenAPI file. They need to be documented so consumers of our REST API can read how to use the API.

• All resources are documented.
