With a nice HSL colour wheel or what-have-you. Maybe restrict to only tones that wouldn't mess up the shading, though?

HSL and HSV suck, use LCH (as I've added in 0.5.1).

Before making a custom colour picker, the better value thing as measured by my own time would be to provide a collection of different palettes, with a regular all-colours one and several ones catering to different colourblindnesses. For the ones with fewer hues available, I could combine hue differences with procedurally generated patterns. (That should be easily done in the palette coloured feature object shader.)
