Updates for Coho #26

Updating a number of functions and their documentations in STADEM to accommodate coho salmon. I've tested all functions that seem to be regularly used; some minor issues still remain for some functions, but each of those seem to be mostly not in use anymore and I will document those and add those as Issues, if necessary. I've run STADEM for coho for sy2012 - 2023 and everything seems to be in working order. Note, I did not update the vignette, but can do so if we want.

I ended up merging the npt_coho branch into the develop branch, to help me resolve merge conflicts, rather than using this pull request. Then I just merged develop into main
