Use lsp-ui when available? #21

lsp-ui provides nice UI modules that could be use in addition or to replace eldoc minibuffer output.

If this is used, this package should probable be turned into a minor mode.

The interesting part is lsp-ui-doc-mode. But it seems to be calling lsp directly.
