switch to grey matter analysis as the default #85

Eventually it'd be nice to provide a menu where the user can configure the preprocessing and choose grey vs white matter. But for now let's just do this to switch to grey matter as the default, since it allows us to compare to results from the paper.

@AlmightyYakob if this is a worker-level change then can you merge and update the worker when you get a chance?
