docs(upgrade): add note about version support

I asked a question in an issue and got a very good answer that might deserve to be documented in the upgrade docs for others to see and avoid asking the same thing.

We're trying to use the docs site for chart info more often, and since it's where the other compatibility info lives, going with https://github.com/Kong/docs.konghq.com/pull/6985 instead.
