Adding genome sketching capabilities

This PR introduces two new scripts: sketch_genomes.py and sketch_sample.py, aimed at enhancing genome sketching capabilities within YACHT.

1. sketch_genomes.py:

• This script allows for the creation of Sourmash sketches from either single or multiple genome files.
• It supports a variety of file formats, including .fasta, .fna, .fas, and .fa, along with their gzipped versions.
• Users can specify the k-mer size and scaled factor, making it adaptable for different genomic analysis requirements.

2. sketch_sample.py:

• Tailored for sketching sequencing reads, this script can handle both single-end and paired-end FASTA/Q files.
• It ensures a seamless process for sketching samples, again allowing users to define the k-mer size and scaled factor.
