Support PDF, doc, odt, etc file contents indexing

Use a dedicated elasticsearch plugin or extract the text of the documents. The best way should be having files saved on Kotti and use ES just for searching AND delegate the text extraction to ES too using an external plugin (don't know if exists something of similar, should investigate).
