Fix 0003-dns-policy-assets links #106

Remove all relative links to multicluster gateway controller as these will no longer function on the docs site when we remove the "multicluster-gateway-controller" repo. Add DNSRecordStructure.md doc as an asset in this repo.

This is only needed to fix the docs site: https://github.com/Kuadrant/docs.kuadrant.io/pull/134
