replace install guide for OCP with the simpler kustomize based one #1021

What related https://github.com/Kuadrant/kuadrant-operator/pull/986 A new install guide as created here. It gives a simpler way to install that doesn't use cat <<EOF type statements. We should replace the existing install guide with this new one
