Add Kuadrant tracing tests #458

We can't configure tracing from Kuadrant CR, this PR waits for this to cahnge.

Waiting for https://github.com/Kuadrant/architecture/issues/48 : Add some global way (in the Kuadrant CR?) to configure the underlying components for them to push spans to the OTLP collector. to be completed
