Copy 0.1 content to 1.0
Change to make 1.0 the default version to show and latest stable -- https://emm-spec.org/ --> https://emm-spec.org/1.0/
Make 0.1 show 1.0 as latest stable -- https://emm-spec.org/0.1/
Add change log to give date on 1.0
Change spec and context for 1.0 to use /1.0/ instead of /0.1/ in context URLs -- https://emm-spec.org/1.0/

Have connected this repo to Zenodo so cutting a github release after merging should then take an archival copy and assign a DOI

Zenodo has correctly picked up the 1.0 release as https://zenodo.org/doi/10.5281/zenodo.10732031
