Sinopia's DevOpsDocs needs to be updated

[x] Dropping Trellis and the Sinopia Server in favor of the Sinopia API and MongoDB.
[x] Dropping support for the Profile Editor
[ ] The new rdf2marc Lambda

Closing, rdf2marc doesn't require special handling beyond basic AWS trouble-shooting.
