Automate the generation of schema.yaml as part of merge_tract_cat.py #292

Motivated by https://github.com/LSSTDESC/gcr-catalogs/issues/223, I propose that we automate the generation of schema.yaml (which is used to provide the set of native quantities for object catalogs and their dtypes and default values), as part of the job of merge_tract_cat.py.

schema.yaml is no longer needed for the new object catalogs that use parquet format. Closing this.
