update rail_estimation_demo notebook #66

Some of the text and a couple of cells are a bit out of date in rail_estimation_demo, fix those up

Looking back at this, the issue was created during RAIL-fest in August, and I see commits from Alex and I in the following days that cleaned up the notebook. I don't see any remaining spurious cells, so I'm going to go ahead and close this.
