Make a Kahneman quote a text quote instead of a screenshot #19

I believe that it's better to use a plain text quote: it's more readable (the screenshot quality is poor) and it's search-friendly.

This is a good suggestion - let me take a look if I will add the quote in text, or replace it - but important for accessibility, I fully agree.

I have decided to add the text and keep the image - I will close this pull request, but it has been incporprated. Thanks again for this suggestion!
