Sinew needs some processing before it's really usable as thread or cordage. It's very tough once dried so you need some kind anvil to hammer the sinew against to separate the fibres out for usage.
Ultimately Sinew is weaker than plant fibre when wet but there's no way to represent that really so we'll just treat it as nigh-identical to plant fibre.
