Text Encoding to Unicode (UTF-8)

Platform: iMac Late 2009
Mac or iPhone/Touch

What steps will reproduce the problem?
1. I use iChm to see my medical books and every time I open the program I need 
to change the Text Encoding to Unicode (UTF-8) to see the right symbols.
2. When I close the program and open it again, it change back to Default Text 
Enconding and I need to change it again.
3.

What is the expected output? What do you see instead?
Please, if you can make the Text Encoding a preference setting that stay in 
UTF-8 every time I open the program I'll really appreciate it.
What version of the product are you using? On what operating system?
iChm 1.4.3,   Lion OS X
