SMB

SMB on the Mac is a tad slower, but it works and Time Machine works, too.
NFS doesn't work for some reason
AFP is much slower on the Mac, than SMB

The bottleneck seems to be the Pi itself. Maybe Raspberry Pi 4B. It has USB3 and 8GB RAM.
