Make sure root config directory exists before copying files to it #9

This PR makes it so ConfigManager makes sure the config/infinity/ directory exists before attempting to copy files to it. This fixes a crash I was running into when the mod was trying to initialize its configs for the first time on dedicated server.
(strangely, running the mod client-side has always worked fine...?)
