Update 05-counting-mining.md with `man date` solution #229

Closes #131 by adding man date to the solution for discovering the + option to the date command.

Recreates PRs #216 and #221. Note that MacOS X is now just macOS since the version number has moved on from 10 (X) to 13+. In this instance I have sorted the options/OSes in order of general popularity of OS.
