spell "uconv" correctly
added sort because uniq doesn't work on an unsorted file
Because C<$> signs have a special meaning on the command line they need to be escaped with a backslash C<\>.
- That's not true, eg:
```
$ echo catmandu convert MARC to Text --field_sep "\n" --fix 'marc_map(020a,isbn.\$append); retain(isbn)'
catmandu convert MARC to Text --field_sep \n --fix marc_map(020a,isbn.\$append); retain(isbn)
```
- is it needed to avoid interpreting it as a Perl variable?
- I don't think so, so I removed the backslash

Indeed the backslash is most probably me copy and pasting an example from a double quote example into a single quote example. Thanks! I'll merge.
