Updated ShuttleAI models.

Added 3 new models. Adjusted model placements.

@herumes "hf" and "aio" are the 2 main ones. (hf being the one we're using on the official demo)

I might add it to railway soon-ish. I'd need to propose a PR to LibreChat to make it a known endpoint first tho.
