Add Docker support for Matchstick in graph-cli

The updated estimate is due to issues with code coverage tool and performance concerns:

1. Code coverage tool breaks
2. Need to make sure tests don't get recompiled if source files have not been changed

PS This will also require altering the CI workflows in demo-subgraph.
