Currently, the Hub defaults to Jupyter Notebook view. Erik at 2i2c proposed the following:
"Could you re-build the image and install jupyterhub without declaring a fixed version such as version 1 and get back to me if that didn't solve this issue? Meanwhile, note that you can update /tree in the URL to /lab to arrive to jupyterlab."
Note that this could be done concurrently to issue #1.
