Hei guys. if you want communicate UNO with ESP (retrieve value from sensor then send sensor data through ESP) you can use "HARDWARE SERIAL COMMUNICATION", just play with your DIP SWITCH. ESP[5,6,7] , UNO[3,4].

i can't see any data reads from analog pins, i'm running 5,6 ON

This is another example of someone who thinks they are helping by posting a project, but then only gives half of the solution or answers. This leaves people frustrated that you really think your helping......your not!

you post a sketch just for ESP8266.. but in sketch you added D2 and A0 ... that pins are electrical connected just at ATMega328, as in schematic (photo).. so, how ESP8266 receive the info from ATMega ? please check also https://www.instructables.com/UNO-R3-WIFI-ESP8266-CH340G-Arduino-and-WIFI-a-Vers/ and also schemtic from https://www.avrfreaks.net/sfc/servlet.shepherd/document/download/0693l00000VJNomAAH
