Seperate docker-compose file for production #19

Currently we only have one docker-compose file, both for development and production, we should default to development, and overwrite if in production mode.

Closing this as we don't need a docker compose file for dev anymore, we'll get to a docker-compose file for production once a new foundation is laid out.
