Switch to 3 knot filter on the Motions #67

The WSW firmware has a 5 knot filter which works well for the majority of competitors. 2023 saw light winds and the 5 knot filter was inappropriate for the sailboard youths. Perhaps use a 2 or 3 knot filter for sailboard youths (and slow boats) in future years?

Note: The 5 knot filter reduces the OAO file sizes, mitigating memory issues and processing overheads in GPSResults. It's fine for the majority of adults (sailboards, kiteboards and wingboards) but needs tweaking for youths and slow boats.

I've had a look at some test tracks; walking / hiking with Jo and with the WSW 2 knot filter (firmware 9005). My walking speed is slightly less than 3 knots, and I know from past experiences that non-planing windsurfers tend to be around 4-5 knots.

I feel that a universal 3 knot filter would therefore work well for all devices. The filter should probably use the live 2s speed, rather than the instantaneous speed (@ 5 Hz) which exhibits jitter and picks up arm movements.
