Remove Tanstack Query #7

We're right now only using it for simple mutations in the end, and that could be handled even by creating our own minimzed useMutation hook that is just stripped down to what we really need

(we may reintroduce tanstack query in the future, if we migrate to it completely for the way we handle socket.io. But for now let's go full or none
