chore(ci): 🤖 update dependencies & improve release workflow #261

Changes:

Upgrade to pnpm v9
Upgrade to Node v20 (LTS)
Upgrade to turbo v2
Split GPR and npm release into two parallel jobs
Trigger the publish dotLottie viewer job right after validate (make it independent from the package release jobs)
Add dotlottie-solid to the size-limit config for tracking its bundle size over PRs
