You can already follow the remote servers via the 'Custom Local Timelines' feature, which can be accessed under the edit timelines menu

I was wondering if it's possible to get something more similar to Tooot - going to Explore/Trending automatically shows posts across Mastodon rather than having to manually add instances?

Well, there is a discover area inside Moshidon already, it's in search -> posts
