Investigate node-gyp issues and why we require Python 2 #4

According to its documentation node-gyp now supports running without Python 2. Something about our dependency chain for the theme seems to break this -- let's figure out why.

This seems to work on macOS now, but further testing is necessary...

Looking good under Windows too. Just gotta try on a Linux system now...

Looks like this was resolved by updating dependencies, not going to investigate further.
