Cook 2 peeled and chopped potatoes for 10 minutes on medium heat in a pan that has 2 tablespoons of olive oil. Potatoes should cover the bottom of the pan. Put fresh broccoli on-top of the potatoes (not touching the bottom of the pan). Cover with a lid.
Add 3 cups of vegetable stock, 1 cup of unsweetened soy milk, 3/4 cups of cashews, 1 tablespoon of mustard, thyme, onion, and garlic. Bring to a boil then reduce heat to a simmer.
Let simmer, covered, for 20 minutes. Stir occasionally.
