Acceptance Criteria
Python code (ideally in a notebook to view output, see example notebook linked below) which demonstrates using STAC to generate mosaicjson and using that mosaicjson layer to visualize a dataset which has many files stored in COGs. The STAC used must be from a STAC catalogue that is a proxy catalogue built on top of an instance of CMR.
We can use STAC results with a few libraries to generate mosaicjson. MosaicJSON can be used with a dynamic tiler to visualize data stored across greater than one COG. Such as SRTM for MAAP.
We want to test this so we can use a STAC catalogue to visualize datasets stored in MAAP CMR

We want to test that this cmr-stac proxy will work for us before deploying a cmr-stac proxy on top of MAAP CMR
