Fix CI #366

UserGuide CI has been broken for ~2 months.. let's try to fix it

As predicted in https://github.com/MDAnalysis/UserGuide/pull/345#issuecomment-1848930254 : it looks like the signs in diffusion_map have flipped again.

Unpinning dask seems to work perfectly fine (tested this locally). Which means that this https://github.com/MDAnalysis/UserGuide/issues/242 is probably no longer relevant.
