Copied from mimic-iv/buildmimic/duckdb with only minor changes required to work on ED thanks to mimic-iv-ed/buildmimic/postgres already existing.

Closed this in to create a new PR #1812 from a PR-specific branch in the fork rather than from main to continue work on another PR.
