If "Organization" is multiplied by clicking on the plus sign, "Department/Group" (as currently) and "Postal Address" are also multiplied.
Currently, this is not the case (only if an additional author is added, then the organization name and department info is pre-filled). It might be common to add multiple authors with the same organization/department/address. But maybe not to add multiple organizations with the same content to the same author? Or is this a new feature requirement to limit the inconsistencies, as you write?

Goal: Users get the opportunity to provide a postal address (free text field) for their institute, without having to "bypass" the list with controlled vocabulary for Max Planck institutes. Institute name (without department/group and/or postal address) remains an option for faceted search.
Actors: Data providers (default users with create collection grant), also acting on behalf of their coauthors.
Rationale: Some users apparently want to provide a postal address (some or all of street, house number, zipcode, city, country). While I don't see a need for it, the current way is free text for organization - which is undesirable because it has neither controlled vocabulary nor 'granular' search functionality for institute.
Action: In View Collection - Edit information an extra field "Postal Address" becomes available. The full list of fields thus becomes (per author)

For second and further authors, information provided for the first author is pre-filled (including postal address). This should limit the potential for inconsistencies (different versions of postal address e.g. due to typos, postal address provided for some but not all authos affiliated with the 'leading' MPI of a collection).
