Migrate app to react-native-paper #43

Context:

Following the redesign efforts we opted to move to react-native-paper
Our initial prototype did not use any UI kits
react-native-paper is a UI kit

Todos:

[x] Upgrade React-Native to 0.72.6
[x] Verify that the app can still build with this new version
[x] Install react-native-paper and its deps
[x] Reset landing page
[x] Add default app bar with title, search, and hamburger icons to landing page

NB:

Post migration, I had to upgrade CoreSimulator on my MacBook
npm install which is configured to also postinstall
npm install --save-dev @react-native/metro-config
Setup the native vector icons by following the steps outlined here, https://github.com/oblador/react-native-vector-icons#installation
